BASQUE CAKE WITH STEVIA BY BENJAMIN GAUFFRE

 

BASQUE CAKE WITH STEVIA

A traditional cake from the Basque country with a low-fat pastry cream

Preparation time : 1 hour
Cooking time : 2 hours
Waiting time : 15 minutes
Difficulty : easy
Cost : cheap
 

Ingredients
For 6

Dough :
1 full egg + 1 yolk
I touch of salt
125g butter
200g flour

 Pastry cream :
250ml milk
2 yolks
5g sugar
30g sugar
30g flour
1 tablespoonful of rhum
5mg stevia (on the point of the knife)

 

Preparation

For the dough
Mix in the eggs, sugar and salt  to form a pale batter.
Add the butter
Then add the flour  and knead  the dough (do not use a processor)
Rest for 15 minutes and it will roll easily

For the pastry cream
Boil the milk with a split vanilla  pod.
Whisk the  yolks and sugar
Add the flour , rhum and hot milk to the batter and stir quickly
 Pour the mixture  into the pan  and cook in a low temperature  till it thickens.
Add the stevia in the end
Let it cool for 20 minutes
 
Pour  half of the dough into  a mould .Fill with cream 2cm high and cover with the remaining dough.
Decorate with streaks using the point of the knife , spread a beaten yolk  on top with a brush.- and cook for 2 hours at 120°C
Open your best  black cherry jam and enjoy !
